Culinary Basics

Welcome to the California Department of Education (CDE) Nutrition Services Division Culinary Basics online training.

By completing this interactive module, you will learn the importance of portion control in food preparation and meal service and the benefits of using proper equipment and utensils to measure and control portions. You will also compare weight versus volume measurements and access references and resources to accurately prepare standardized recipes and control portions for school food service.
The training references a variety of resources all of which are found in the Resource Section. Prior to beginning the training, please have the following handouts ready for specific training activities: Basics at a Glance and the Food Buying Guide.
This training takes approximately 45 minutes to complete. Please allow enough time to complete the training in one sitting. After completing the training, you will take a short quiz followed by a training evaluation. You will then have access to a printable training Certificate of Completion for your records.
